In the middle of the week, you want a simple meal that will go on the table fast and this Pork and Peppers skillet is a fast solution.
If you have thin-cut, boneless pork chops, this could be ready in as little as 15 minutes. The rice might take longer to cook than the pork chops. However, if you use thick chop or pork chops with the bone, your cooking time will be longer.

Easy Skillet Pork and Peppers
Ingredients
- Boneless thin-cut pork loin chops
- 2 tablespoons olive oil
- 1 green bell pepper sliced
- 1 medium onion sliced
- 1 15 ounce can diced tomatoes in juice
- 2 tablespoons red wine vinegar
- Salt and pepper
Instructions
- Heat a skillet over medium-high heat. Drizzle with olive oil.
- Salt and pepper pork chops on both sides and place in skillet. Cook on both sides for about 3 minutes.
- Top pork chops with peppers, onions, and tomatoes. Pour red wine vinegar over the vegetables. Cover and cook about 5 minutes more or until vegetables are tender and pork is cooked through.
- Serve over rice.
