Just chop up the vegetables, rinse your chickpeas, and shake up a mason jar of Greek dressing.
While I think it tastes better on the second day, after all those flavors have mingled together, Greek Chickpea Salad is perfect for a quick lunch or as a side dish.

Greek Chickpea Salad
Ingredients
- 1 can 14.5 ounce garbanzo beans/chickpeas, drained and rinsed with cool water
- 1 medium red pepper diced
- 1 medium green pepper diced
- 1 small red onion diced
- 1 medium cucumber sliced and cut into 1/4 size pieces
- salt & pepper to taste
Instructions
- Combine the salad ingredients, gently mixing together.
- Top with homemade Greek dressing and give a final toss.
Greek Dressing
Ingredients
- 2 cloves garlic minced
- juice from 1 medium lemon
- 1 teaspoon dried oregano
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt & pepper to taste
Instructions
- Whisk together the dressing ingredients in a small bowl or mason jar (perfect for shaking to combine).
- Use immediately or store in the refrigerator until ready to use. Shake again to combine the ingredients before using.
