I was thinking lately about all the wishes I made as a child and young adult… All the times that God redirected my path to bring me to the day when I met my husband. The strangest part of our love story is that we had the same friends, attended the same small college, both had studies in the music department, and even graduated from college at the same ceremony… but never met.
Until one day he walked into the church I attended with his saxophone, and as I saw him on the stage and he saw me across the congregation, there was this weird connection. I felt like I had known him forever and later discovered that he felt the same way.
When Peanut Butter Meets Chocolate
People say that we go together like peanut butter and jelly, but I have never liked jelly on my peanut butter sandwiches. I would much rather add a layer of chocolate! And I think peanut butter and chocolate is a much better representation of what marriage is all about. Each is individual, but they compliment one another so well, and one with out the other is just not as good as when they are together. Plus, every once in a while, things get a little nuts but they always smooth back out.
This peanut butter cup ice cream pie is decadent and dreamy, perfect for a special occasion and not difficult at all. If you want an easy showstopper dessert, make this pie.
Cook’s tips
- While I made this in a springform pan, you could probably make it in a deep pie dish or even stretch it, using the entire brownie mix, into an 8×10 casserole dish.
- I used a family-size brownie mix but only place half of the batter into my springform pan. I put the other half in a round cake pan to serve for snack later.
- My favorite ice cream is Moose Tracks®, the vanilla ice cream with fudge swirls and tiny peanut butter cups studded throughout the frozen dairy dream. Oh my goodness! However, you could use any of your favorite ice cream flavors.
- Feel free to experiment with different frosting layers or add a layer of mousse, but I do not recommend an ice cream sauce as it can become VERY hard when frozen.

Brownie Crusted Peanut Butter Cup Ice Cream Pie
Ingredients
- 1 brownie mix with ingredients to make the brownies
- Peanut butter frosting homemade (because I cannot find it at the store)
- Chocolate fudge frosting homemade or store bought
- 1 quart ice cream like a chocolate and peanut butter cup combination
- 1 container 16 ounces frozen whipped topping, thawed
- Reeses Peanut Butter Cups coarsely chopped for garnish
Instructions
- Mix brownie batter according to package directions. (I used a family-sized mix and poured half into a springform pan, reserving the other half for a brownie snack.) Bake at 325 degrees for about 15 minutes of until the brownie is set and a toothpick inserted into the middle comes out with just moist crumbs. Cool completely. Run a knife around the edge of the brownie to loosen the brownie from the sides of the springform pan.
- Spread a layer of peanut butter frosting over the brownie and place in freezer for about ten minutes or until firm.
- Add a layer of chocolate fudge frosting over the peanut butter and return to the freezer for about ten minutes.
- Remove the ice cream from the freezer and allow to soften slightly. Then, spoon the ice cream over the fudge layer of the pie. Smooth the top evenly and return the pie to the freezer until solid.
- Add a layer of whipped topping and sprinkle with chopped peanut butter cup candies. Return to the freezer until ready to serve.
- Before serving, prepare a cup with hot water. Dip your knife into the hot water and then wipe the knife on a dry towel. Run the knife around the inner edge of the springform pan to loosen and then remove the outer ring of the pan.
- Dip and clean the knife in hot water again to make pretty pie slices. Serve immediately.
