Perfect Peanut Butter Frosting

My Granny used to make the most incredible peanut butter cake. Actually, I think the cake was more vanilla than peanut butter but the icing… yes, it was icing and not peanut butter frosting… was poured over the cake and then dried into this incredible peanut butter fudge. The cake would often split from the heat of the icing but no one cared because it tasted incredible.

Over the years, many of us have tried to recreate that peanut butter icing and somewhere along the way, I developed this peanut butter frosting recipe.

It is not Granny’s peanut butter icing. Not even close. But it is still amazing and perfect for topping cupcakes of for using as a filling in whoopie pies, cookies, and cakes.

Perfect Peanut Butter Frosting

  • 1/2 cup unsalted butter
  • 1 cup smooth peanut butter
  • salt, just a pinch
  • about 2 cups powdered sugar, sifted
  • 3 to 4 tablespoons milk

Cream together the butters and salt until fluffy and consistent in color.

Add powdered sugar about 1/2 cup at a time, mixing between additions until smooth.

Add milk slowly until you reach the desired consistency. If you add too much milk, just add more powdered sugar, but don't go crazy as it will make the frosting too sweet.
