Slow Cooker Beef Burgundy
Super easy. No frying or browning required and you cannot taste the difference. Slow Cooker Beef Burgundy is delicious… and it is gluten free too. Would be fabulous for an easy dinner party.
Ingredients
- 2 tablespoons olive oil
- 1 London Broil cut into one-inch cubes
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup beef broth or mushroom stock
- 1 cup red wine
- 16 ounces baby bella mushrooms sliced thickly
- 1 cup baby carrots
- 1 onion chopped
- 2 cloves garlic minced
- 1 bay leaves
Instructions
- In a plastic storage bag, mix cornstarch, salt, and pepper. Add cubed beef and toss together until the beef is well-coated.
- Place olive oil in the bottom of the slow cooker and add the beef.
- Top with vegetables, bay leaf, and liquids.
- Cover and cook on low for 6 to 8 hours.
- Toss to coat in the gravy that forms. Serve over mashed potatoes or rice.

When you say “one London Broil” do you mean one pound? How much?

Ok so I would about two to three table spoons of corn starch for this.half cup for two cups of liquid seems a bit much to me.
