Sneaky Fiber Chocolate Chip Cookies

When my children have been avoiding fiber-rich foods, we get an abundance of tummy aches as their… uhhh… plumbing gets a little backed up.

Even though we are a whole foods family and the children eat a ton of fresh fruits and vegetables, our special treats were lacking in fiber. So, I have tried to find ways to boost the fiber content where they don’t expect it.

Cookies are an easy place to boost fiber. Just substitute up to half of your flour with whole wheat flour or finely ground oatmeal and switch nuts for oats.

Sneaky Fiber Chocolate Chip Cookies

  • 1 1/4 cup unbleached all purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 sticks unsalted butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 2 cups semi-sweet chocolate morsels
  • 1 cup oats or chopped nuts

Preheat oven to 375 degrees.

Combine flours, baking soda, and salt in a small batter bowl. Set aside.

Beat together butter and sugars. Add vanilla and eggs, one at a time. Beat until fluffy.

Scoop flour mixture in 1/2 cup increments into mixerbowl until completely combined.

Stir in oats ad/or nuts.

Using a medium cookie scoop, place dough in rounded mounds on a cookie sheet one inch apart. Bake for 12 to 14 minutes. Remove from oven and allow to cool for 7 minutes on the baking sheet before moving to a wire rack.

    I LOVE being sneaky…and this is a perfect way to do it. I imagine those cookies get gobbled up and no one knows the difference. Such a smart mama you are! :^*

    I have also ground oatmeal up in the blender to make its own ‘flour’…but I do love the texture of the oat flakes in cookies too. Just a thought I wanted to share….=)
