I love sweet potatoes but do not cook them as often as I would like simply because I forget to put them in the oven in time to be ready for dinner. In the summer, I skip sweet potatoes because the kitchen is too hot to have the oven on.
So I decided to experiment by placing sweet potatoes in my crock pot.
I had five large sweet potatoes. After scrubbing the potatoes, I used a knife to slice a hole in each side of each potato. Then, I layered the sweet potatoes in my slow cooker and added about 1/4 cup of water.
The sweet potatoes cooked in the crock pot for about 7 hours on low and turned out very tender and almost creamy. Divine!
Cook’s Tip: If you prefer a dry potato, I recommend you skip the water in the crock pot.

Ingredients
- 5 medium sweet potatoes scrubbed
- ¼ cup water
Instructions
- Scrub the sweet potatoes well and slice a hole in each side of each potato.
- Layer the sweet potatoes in the slow cooker and add the water.
- Cover and cook on low for 7 hours or until the sweet potatoes are easily pierced with a knife.
